Parmesan cheese is one of the hard cheeses which is originated from Italy. Typically it undergoes a long ripening period to develop its sharp, piquant flavour.
To make 1 Kg of Parmesan cheese costs around 15-16KG of milk. After it is made, the semi-finished cheese is sent to ripening room where it is being ripened for at least 9-12 months. The technicians are inspecting, rotating and sorting these cheeses during ripening, to ensure the finished products meet quality standard.
In Italy the most parmesan cheese is called Parmiggiano Reggiano) which requires at least 24 months ripening.
